Just made a delicious chicken chili. Got it from my girl crush Martha Stewart. Just love her. Anyway here's what you do.
2 pounds chicken ( cook ahead of time. I grilled mine. Delicious.)
10 plum tomotoes halved (I used vine ripened and it worked just as well I used 3)
1 jalapeno halved (I would de-seed this. I only did one half and it was a little too spicy for me. Nick thought it was good.)
1 white or yellow onion halved
2 cloves of garlic ( I just used minced garlic from a bottle. I'm too lazy to chop garlic for evey meal.)
On a rimmed baking sheet place these bad boys (veggies) and stick them in the oven under the broiler. Until they start to char.
After they are slightly charred put the jalapeno and tomatoes into a food processor or blender and bled until chuncky.
Chop your onion.
In a large skillet add some olive oil and saute your onion and garlic until they are tender.
Add:
1/4 c chili powder
salt
Cook together for about a minute.
Stir in:
1 can chipotle chiles in adobo sauce finely chopped (I threw mine in the food processor)
1 can diced green chiles
add cooked chicken
Raise the heat to high and add the jalapeno tomato mixture. Cook until fully incorporated (3-5 minutes)
Stir in:
1 3/4 c chicken stock
1 can red kidney beans
Let this all simmer for 20 minutes. I like to let my beans get good and done. I let mine simmer for 30 minutes.

Rachel Ray
I have had a bunch of her cookbooks forever and am finally using them. Last night I made the Leeky Chicken. It was so easy to make, I won't even bother to go upstairs and grab the recipe book. That and I am lazy.
Ok, grab a package of chicken cutlets and put them in a warm pan with olive oil. Season them with salt and pepper when you put them in the pan. While the chicken is cooking, cut up two small or one large leek. Make sure that you rinse the leeks really well because there is a lot of dirt in between the layers. When the chicken has been flipped, go ahead and throw the leeks in with the chicken. Let them hang out together for a couple of minutes and then add one cup of white wine. Let all of that chill for about 3 minutes and add one tablespoon of butter. This concoction is supposed to be served over couscous. Couscous is AWESOME because it is super easy to make, cheap and delicious. Bring 1.5 cups of chicken broth to a boil and then to that, add 1.25 cups of couscous. Remove from the heat, cover with a lid and allow to rest for about 5 minutes. Stir and serve. The recipe tells you to add 1/4 cup of golden raisins when you add the couscous to the broth. I didn't have golden, so I used regular raisins and Henry loved it!!

Reutzel's Menu and Spicy Chicken Recipe

Teriyaki Chicken
Tiny Spicy Recipe:
1 1/2 lb chicken, cut up
garlic salt
1 beaten egg
cornstarch
Sprinkle chicken with garlic salt and let stand in fridge for 1 hour. Dip chicken into egg and then into cornstarch. Brown chicken in pan until brown. Place chicken in baking dish.
SAUCE
3/4 tsp Sambal Oelek chili paste
3/4 c sugar
3/4 c catsup
6 tsp soy sauce
dash of salt
3/4 c chicken broth
6 tbsp brown sugar
3/4 c white vinegar
mix and cook in sauce pan until sugar is dissolve. Pour over chicken and bake @ 325 degrees for 1 hour turning chicken every 15 min.
ENJOY!

Finally!
The recipe I have really been wanting to post was introduced to me by fabulous cousin Sarah Cross!! It is very simple and really one of our family favorites. So, her we go: In a crockpot put a few breasts of chicken, a couple of cans of beans (either black or kidney) and some salsa. Cook on low for 5-6 hours and then shred the meat. Serve it like you would any taco filling. Let me add however, that I think meat in a crockpot should always be cooked on low. Every time I forget to make dinner and try to cook it on high, the meat doesn't turn out as juicy as it does on low. I have a really delicious BBQ beef recipe that I will post soon. I am going to sit down and do the menu planning for next week on Sunday night, so I will let you know what we are having next week. Thanks for all of the recipes so far! I am really looking forward to trying some of them out.

Gabriel's Everyday Smoothie
Okay, okay. Everybody's putting dinner stuff, but I love a good smoothie... I drink one every single morning. Faeth and Scott can testify to that... Here's the one that I've been making lately: Measurements are to your taste...
8 or So -- Frozen Strawberries
1/2 cup Frozen Blueberries
1 Whole Ripe Banana
1/2 a Cucumber, peeled and seeded
2/3 cup Kefir (...lately I've been using Pomegranate flavored)
About 1 1/2 Cups Carrot Juice
If you want to use this as a meal replacement, add a good protein powder, I like the vanilla soy protein powder from Whole Foods.
I like my smoothie to be on the thick side, so I go easy on the carrot juice, until I have the consistency I want. The thing I like about this recipe is that you get tons of good vitamins, great potassium, and active live protein packed cultures from the Kefir. The cucumber is awesome for your skin and helps to play down the sweetness (I don't like my smoothies to be too sweet) I will usually have this smoothie with a toasted english muffin and an egg (boiled, fried, scrambled) -- it's a great breakfast to get your morning off to a good start! I know that Frozen Strawberries and Blueberries can be about $5 a bag, but one bag each lasts me a whole weeks worth of Smoothies... I'll pay that much for 1 Smoothie from Jamba Juice! Another good trick is to let your bananas get really ripe, then cut them up and freeze them. Enjoy!

1 pkg. dry Italian Salad Dressing Mix
1 can Cream of Chicken soup
2 - 4 chicken breasts but into 2 inch pieces (or so)
Pasta of choice
Parmesan cheese
optional: cooked broccoli, chopped tomatoes
Mix the first 3 ingredients. Spread a small amount in a crock pot. Layer with chicken pieces, more sauce, repeat. (2 layers ending with sauce on top)
Cook in crockpot on low for 6 -8 hours
Dish chicken and sauce on cooked pasta. Top with parmasean cheese. Broil until the cheese gets melted and starts to brown. Place broccoli around the pasta and sprinkle with fresh tomatoes.

Carraba's Chicken Bryan with Lemon Butter Sauce

4 Chicken Breast
Salt and Pepper
Olive Oil
2 oz. goat cheese (I used garlic and herb goat cheese in log form)
Lemon Butter Sauce
Sundried Tomatoes
1 Tbs Fresh Chopped Basil
Season chicken on both sides with salt and pepper. Dab with olive oil. Grill Chicken until cooked. Place on slice of goat cheese on top of chicken and continue to cook until warm. Place lemon butter sauce in a saute pan over med-low heat and add sundried tomatoes and basil. Heat gently until hot. Place chicken on plate and spoon sauce over top.
