I hope this gives someone some ideas for upcoming menus. I am going to be posting the tiny spicy recipe as soon as I get it from my mother-in-law. It is so yummy.
Here is Aunt Bonnie's recipe for Sweet Potato(Yam)Wedges (not wedgies):
ReplyDeleteScrub and peel 2 med. yams
Cut in half crosswise and then cut each half into 8 wedges. Repeat with other yam.
Add two, three or four shakes of tabasco sauce to some olive oil in shallow dish(pie plate works).
Roll each yam wedge in olive oil.
Combine equal amounts of Italian Bread Crumbs and Panko(Japanesse style bread crumbs)in shallow dish(pie plate works here,too). Sprinkle with a little salt, pepper and garlic powder. (Paula Deen's house seasoning)
Roll each oiled wedge in bread crumb mixture. Place onto "Pam" sprayed baking dish.
Bake at 375 degrees for about 50 mins. to 1 hour. Just poke with fork to check for doneness. These are delicious,easy and heart healthy...
This is not really a recipe---just a quick dinner. The Big Chicken Salad
ReplyDeleteEnough salad greens(verity)for total eaters
Cucumber, green onions, green, yellow and/or red peppers,etc. cut up for salad.
Mandarin oranges, craisins, chineese noodles, slivered almonds, croutons, etc.
1 chicken tender for each eater cut into bite sized pieces.
Let each person assemble their salad with ingredients. Serve with baguette and olive oil. Any dressing works well...
Just to clarify my last recipe. The chicken tender should be cooked of course!!! Most grocery store deli's have these available. McDonald's has a great chicken tender. I have also used a broasted chicken from the store...
