some dang quesadillas

Quick yummy dinner.
grill some chicken
make some fresh pico
cook some rice and beans (i used black)
grate some cheese (i used cheddar, but other kinds would be good too)
put some rice, beans, diced chicken, and cheese on a tortilla and cook in a fry pan until the cheese is melted. Top with pico and whatever else your tummy feels like!!! I know, like you all need a recipe for something as simple as a quesadilla, but it's a menu idea so there!!!

pasta

nick and i just made a delicious pasta dish the other night for dinner. i think next time we will just use regular noodles so it's not quite so bad for us. anyway here is the recipe.

one 20 oz package of tortellini, or raviolli
diced ham (i used a cooked ham steak)
diced red pepper
fresh spinach
sugar snap peas
1/4 c butter
fresh ground pepper

in a fry pan brown the butter over a medium heat until the butter is golden brown. add the pepper, ham and to the butter to cool it down.

put spinach and peas in a collander

cook pasta and pour over the spinach and peas in the collander. you will be draining the pasta over the spinach and peas. add the pasta mixture to the butter mixture add pepper at the end.

Labels

I hope you all don't mind but I added LABELS to each post.  It has a list of the labels on the sidebar so it is easier to find things that you want to make.  If you will all just put a label on each post you make it will make things a lot easier.  The label section is in the bottom right corner of the post box.  You can put several labels on an item.  For example If I posted a recipe for Chicken Chili I would label it with Chicken, Dinner, Slow Cooker!  Does that make sense?  You just need to put a comma between each label or you can click on the SHOW ALL and select what you want.  Thanks!

Smoothie

If you follow my craft blog you'll already have this recipe but it is so yummy.

Ingredients:
1/2 a banana
6 chunks fresh pineapple
6-8 strawberries
4 tbsp vanilla yogurt
1/4 cup skim milk
1 tsp brown sugar
8-10 ice cubes

Throw in blender and enjoy!

Mango Chicken Tacos

This is a recipe for delicious Mango Tacos.  They are my favorite right now.  I make them probably 2-3 times a month because they are so yummy and easy.

4 chicken breasts
2/3 cup brown sugar
2 cups mango salsa (I use the Costco kind)
Salt

Throw all ingredients in a crock pot and cook on low for 8 hours.  Shred chicken and serve on tortillas.  Top with cheese and sour cream.

Cilantro Sweet Rice

Hey everyone, I've never posted on here before, but thought I'd post my newest favorite recipe. It's really easy, and really good....

Cilantro Sweet Rice

1 T. oil
1/2 of a white or yellow onion, chopped
1/2 of a bunch of fresh cilantro, chopped
1 1/3 C. white rice *
3 C. chicken broth
1/3 C. sugar

Put oil in pan. Saute onion until translucent. Add cilantro and saute a minute more. Add rice; cook until light brown. Combine broth and sugar, letting sugar dissolve. Stir into rice. Bring to a boil. Cover and cook on low to med-low until rice is done (25-30 minutes).

*I use polished basmati, and it's REALLY good that way. You just have to add an extra 1/2 cup of chicken broth and 2 T. of sugar.

Chicken Chili

Just made a delicious chicken chili. Got it from my girl crush Martha Stewart. Just love her. Anyway here's what you do.
2 pounds chicken ( cook ahead of time. I grilled mine. Delicious.)
10 plum tomotoes halved (I used vine ripened and it worked just as well I used 3)
1 jalapeno halved (I would de-seed this. I only did one half and it was a little too spicy for me. Nick thought it was good.)
1 white or yellow onion halved
2 cloves of garlic ( I just used minced garlic from a bottle. I'm too lazy to chop garlic for evey meal.)
On a rimmed baking sheet place these bad boys (veggies) and stick them in the oven under the broiler. Until they start to char.
After they are slightly charred put the jalapeno and tomatoes into a food processor or blender and bled until chuncky.
Chop your onion.
In a large skillet add some olive oil and saute your onion and garlic until they are tender.
Add:
1/4 c chili powder
salt
Cook together for about a minute.
Stir in:
1 can chipotle chiles in adobo sauce finely chopped (I threw mine in the food processor)
1 can diced green chiles
add cooked chicken
Raise the heat to high and add the jalapeno tomato mixture. Cook until fully incorporated (3-5 minutes)
Stir in:
1 3/4 c chicken stock
1 can red kidney beans
Let this all simmer for 20 minutes. I like to let my beans get good and done. I let mine simmer for 30 minutes.
